Fiesta Zesty Lentils

Ingredients:


1 cup lentils, washed
3 cups broth, 1 cup water
1 medium onion, chopped
1 Tablespoon garlic powder
1/2 cup green chile (chopped can be from a can-drained)
1 15 oz can diced tomatoes (add liquid too)
1 tsp. cilantro
salt and black pepper to taste

Directions:

Sort lentils (removing any debris) and rinse before cooking. Combine rinsed lentils and remaining ingredients in large saucepan and bring to a boil. Reduce heat to medium low, and simmer with lid tilted (to allow steam to escape) until lentils are fully cooked, about 15-20 minutes. Add salt and pepper to taste.
Serves 4
