Refried beans actually don't need any added fat to make them fabulous and they are incredibly simple to make.Low Fat Refried Beans: 2 cups of
cooked pinto beans
2-4 tbsp bean broth (or water) 2-4 tbsp of flour In large skillet, combine all the ingredients. Over medium heat, smash the beans, mix with bean broth (or water), until beans are completely mashed. Add flour to thicken the consistency. To add some sizzle, you can add 1 to 2 tablespoons of chopped green chile (optional). These low fat, or fat-free refried beans can be served as a side dish with any mexican meal, or you can make tostadas that are not only very healthy, they are low and fat and incredible low cost.
8 corn tortillas 2 cups of low fat refried beans Chopped lettuce (or cabbage) Chopped red onion Salsa Sour Cream (light- or non-fat) Sliced Avocado (optional)Preheat oven to 350 degrees (F). Lightly coat corn tortillas with oil and salt to taste (you can also use vegetable cooking spray). Bake corn tortillas on cooking rack for approximately 6 minutes. Turn tortillas over in the oven and cook an additional 4 minutes (until toasted crisp). Top each tortilla with 1/4 cup low fat refried beans, chopped lettuce (or cabbage), chopped red onion, salsa, and low fat sour cream. Makes 8 Servings * * *
