Quinoa- A great whole food that is lavishly cheap!

Quinoa is crop that has become highly appreciated for its nutritional value and has a protein content between 12% to 18%. These plants, grown at high altitudes, produce large quantities of highly nutritious seeds.

Quinoa, in its natural state, has a bitter-tasting coating of saponins. Most quinoa sold commercially in North America has been processed to remove this coating. When cooking quinoa, you'll want to rinse it before to remove any bitterness.

Unlike wheat or rice, which are low in lysine, quinoa contains a balanced set of essential amino acids making it a complete protein source. It is also a good source of dietary fiber and phosphorus and is high in magnesium and iron.

Quinoa is also gluten-free and considered easy to digest.

So how does quinoa taste?

It's light and fluffy and has a slight nutty flavor. It can be added to rice in pilafs, served alone, or combined with main dishes.

Since quinoa cooks light a fully, it's very easy to season. It soaks up broths, garlic, salsa mixes, and many seasonings making it highly versatile in meals and very tasty.
